My professional opinion is that store bought cookies are a waste of everyone's time, and even bakery cookies can't compare to a fresh-from-the-oven-still-warm cookie. Plus, when you're avoiding gluten or any of the top 8 allergens, it can be nearly impossible to find a safe cookie, let alone one that is safe and delicious. Perfect Chocolate Chip Cookies
Ingredients
Dry
2 Cups Bob's All Purpose Gluten Free Flour Blend
1/2 Cup Tapioca Flour
1 1/4 Cups Organic Cane Sugar
1 teaspoon Himalayan Pink Salt
1 teaspoon Baking Soda
1/2 tsp Xanthan Gum
Wet
1 Cup Avocado Oil or Coconut Oil (melted)
1/2 Cup Unsweetened Applesauce
1 Tablespoon Real Vanilla Extract
1 Cup Chocolate Chips
This recipe could not be simpler. Here's the deal- pre-heat your oven to 350 degrees. Whisk together all of the dry ingredients in a large bowl. Whisk together the wet ingredients in a separate bowl. Then, combine them with a firm spatula or wooden spoon. Mix it up fully, making sure that you don't leave any dry pockets. When you're done, you should have a good looking, cohesive cookie dough, firm but pliable. Pour in your chocolate chips and mix until evenly combined.
Scoop onto a lightly greased cookie sheet with a cookie scoop or a generous tablespoon. Leave a couple inches between each cookie because they will spread a bit. You do not need to chill the dough! Literally bake them as soon as the dough is mixed and ready.
Bake at 350 degrees for 12-14 minutes. The cooking time depends both on your oven and your cookie preference. If you like a crispier cookie, let them bake until they get a more golden color.
Let them cool on the cookie sheet for about 10 minutes before transferring to a cooling rack, or to your mouth. Feel feel to pry them from the cookie sheet while they're still hot, but they may fall apart in your hands (hot cookies are delicate!)
